Something confusing here. A Jaguar registered as OXK 761 is listed by the UK licensing authority as red, taxed until 1 June 2016 and first registered on 29 May 1956.
Registration NVC 810 shows 'not found' on DVLA website.
Maybe the registration OXK 761 has been incorrectly linked to 800057?

The original 800057 as supplied new to Autocars Ltd, Rangoon Burma was a home delivery car and registered new in Coventry 29 may 1956 to T. Yip who I believe is the legendary motor racing driver Teddy Yip of
Hong Kong and team owner of Theodore Racing.
The problem is we appear to have 2 cars claiming this number in 2000 it was reported that 800057 was one of three rhd XK140 roadsters known to be in Japan, this car having been imported into that country from the UK in 1979 with a restored interior.
A second car was noted as being in West Sussex in 1999 and that it was the chassis, engine and the very rusty remains of 800057 although the engine was from an XK140FHC. The engine with the car had in fact come from an XK140 FHC rhd. Subsequently, it appears that these parts were used in the rebuilt XK140 OTS registered OXK761, red with biscuit trim.
One of these 2 cars has been imported into Australia and as a guess it may be the car from japan.
There is something relating to this chassis number in XK Gazette May 2000, p12

There is a UK car claiming the same Chassis number, the owner as the original log book and registration. The owner was featured in part of this article describing how he built his car: www.sussexlife.co.uk/out-about/places/the_revivalists_1_1634855
Either this car or the car with Dutton is not the original car.

I didn't get to look at this car whilst it was there so cannot confirm that this car was the genuine 800057
